Holden Manz Wild Ferment Chenin Blanc

This wine is pale white gold. Hand-selected bunches from a 1983 bush vine vineyard in Simonsberg/Paarl were harvested on 16th February 2022. Berries were cooled to 5ºC before a "Champagne" crush cycle, with clarified juice transferred to barrels and tanks for wild yeast fermentation, 20% in second and third-fill French oak barrels. Stirred continually on fine lees, it was bottled on 23 November 2022.

• Taste: On the nose, this Chenin Blanc is an aromatic delight, with a complex bouquet of citrus, tropical fruits, white flowers, and a subtle hint of white peach. On the palate, the wine is medium-bodied with a refreshing acidity. Bright pear and lemon meringue flavours dominate, with a lingering finish of summer melon and a touch of toasted brioche. 
• Food Pairings: Roasted fresh Kingklip with seasonal vegetables; lightly spiced calamari salad; herb-crusted goat cheese, or clam chowder.
